Loved this post! Eating expensive/fine dining has always been an art extending not only to food, but also to art of good etiquette that goes with it.
Eventually everything becomes affordable/available and your article reminded me of eggplant. To Italians, eggplant(radicchio & finochio) was like good old mashed potatoes then became haute cuisine.

A great read: 'La Distinction' by French sociologist Pierre Bourdieu whose research discusses how the rich explain there ideas on taste..you may be familiar with it.
